Ingredients
- 1 lb of cucumbers 2 good sized cucumbers, peel still on, coarsely chopped.
- 1/2 cup lime juice fresh 5 to 10 limes, depending on how juicy they are.
- 1 1/4 cup packed mint leaves about a large handful of stems removed.
- 1/2 cup sugar.
Method
- Blend ingredients:
- Put ingredients in the blender, add enough water to fill 3/4 of the blender. Hold the lid on the blender and purée until smooth.
- Strain out solids:
- Place a fine-mesh sieve over a bowl and pour the purée through it, pressing against the sieve with a rubber spatula or the back of a spoon to extract as much liquid out as possible.
- Add ice:
- Fill a large pitcher halfway with ice cubes. Add the juice. Serve with sprigs of mint and slices of lime.

Ingredients
- 1 medium lime (sliced)
- 16 oz tonic water
- 16-24 slices cucumber
- 6 oz gin (1 1/2 oz equals 3 Tbsp)
- 1 medium lime (sliced)
- 4 Tbsp sugar
Instructions
- Add mint, gin, lime, and sugar to the shaker and muddle.
- Add cucumber to shaker and shake.
- Pour it in a glass filled with ice and top with tonic water.
- let sit for a few minutes for the flavours to enhance and garnish with cucumber slices and enjoy
